Baked Barramundi

Ingredients:

  • Barramundi fish fillet (200g).
  • 1 cup (200g) of steamed basmati rice.
  • 100g of steamed bok choy.
  • Lemon wedges, to serve.

Lemon and Garlic Barramundi Kebabs

Ingredients:

You will need bamboo skewers for this recipe

  • 1 (about 800g, 3cm thick) Barramundi fish fillet cut into 3cm cubes.
  • 1/3 cup (80ml) extra virgin olive oil.
  • 1 tablespoon finely shredded lemon rind.
  • 1/4 cup (60ml) fresh lemon juice.
  • 1/4 cup (125g) loosely packed coarsely chopped fresh oregano.
  • 2 garlic cloves, crushed.
  • 1/2 tablespoon ground cinnamon.
  • Salt & freshly ground black pepper, to taste.
  • Tzatziki, to serve, if desired.
  • Sliced sourdough bread, toasted, to serve, if desired.

Barramundi Kabsa

Ingredients:

  • 1 kg Barramundi fish fillet, cut into smallish large pieces.
  • 2 tablespoons tomato paste.
  • 6 garlic cloves.
  • 1 large white onion, diced.
  • 2 cups (400g) rice.
  • 3 cups (750ml) water.
  • 1 vegetable stock cube.
  • 1/2 tablespoon 7 spices mix (black pepper, paprika, cumin, coriander, nutmeg, cinnamon, cardamom), sea salt & freshly ground black pepper, to taste.
  • 4 tablespoons butter.
  • 1/4 cup (50g) fresh cilantro.

Shrimp Paella

Ingredients:

  • ½ Cup chopped onion.
  • 2 cloves garlic, minced.
  • 1 ½ cup regular rice.
  • ½ cup chopped sweet red pepper.
  • 1 ½ cup tomatoes, peeled and chopped.
  • 2 tsp. salt.
  • ¼ tsp. saffron, crushed.
  • 4 cup boiling water.
  • 600 gram shrimp peeled no tail.
  • 60 gram calamari cut into ring.
  • 10 mussels in shell.
  • Little of rosemary.
  • 600 gram frozen peas.

Sweet and Sour Shrimp

Ingredients:

  • 600 gram shrimp – peeled with tail on.
  • ½ cup soy sauce.
  • 3 tbsp corn oil.
  • 2 tsp sugar.
  • 1 tbsp corn starch.
  • 1 onion / 1 green pepper / 1 tomato all cut into cubes.
  • ½ cup pineapple.
  • Salt.
